According to the article below, the United Nations has declared 2023 the International Year of Millets. Millets are ancient grains that are among the earliest domesticated plants. There are around 6000 different kinds of millets, and they have numerous health and environmental advantages. Millets provide a healthy base for sustainable meals in many different food cultures. Millets are a very low-impact crop, with a lower carbon footprint than wheat and can grow in dry climates with little or no water beyond rainfall. They have a natural resistance to pests so fewer chemicals are needed when growing millet.
Millets are gluten free, and most varieties have more protein than rice. Millets are among the most nutritious of all grains and are gluten free. The article gives some ideas on cooking with millets and lists cookbooks with recipes for using millets and other ancient grains. I plan to buy some millet flour and millet whole grains later today. https://earth911.com/home-garden/millet-for-the-environment-and-better-nutrition

Earth Day is April 22. It’s more important than ever to think about ways to care for our earth. That sentence can seem overwhelming, because who can care for an entire planet? Well, you don’t have to do it all by yourself. If each of us does something to reduce our individual impact on the planet, we are beginning to make a difference. You don’t have to do something big, although you can if you want to. You can pick something small – just do it. Then, pick a second small thing and do that. Small individual acts add up when a large number of individuals are involved. Pollution and climate change are the result of lots of individual actions by governments, corporations, and people like us. The solution will come from lots of individual actions by governments, corporations, and people like us. So, to celebrate Earth Day 2023, let’s get started. Here are a few ideas to consider:
Some climate and sustainability information sources advocate a purely vegan diet for everyone. However, there are many reasons why not everyone can or will adopt a vegan diet, and simply changing some of your food choices will make a difference without you having to adopt a fully plant-based diet. Some food items have much more impact on the environment and climate than others. For example, some meat sources such as beef have a much larger impact on the earth than other meats such as chicken. The article in the link discusses these differences between foods and suggests small tweaks that you can consider without jumping into a full-time drastic diet modification. I am implementing some of the ideas from the article below. Start by replacing one or two meals a week with menus that are more earth friendly.
